An Angel Food Cake, or Angel Cake, has a sweet golden brown crust with a soft and spongy snowy white interior. This cake is made with egg whites, sugar, vanilla and almond extracts, and flour. It does not contain egg yolks or any fat so it is perfect for those watching their fat intake.

    My parents, especially my mom loved the angel cake so much she wanted me to make it again. She just hopes it was a little less sweet. I'm not sure if I can lessen the amount of sugar in the meringue without effecting the cake.

    Could you just use vanilla extract instead of the almond extract so it is 2 1/2 teaspoons of vanilla extract?

    Ok so the Tar Tar lowers the ph and makes the egg whites more acidic, better stabilizing the mixture. Lemon juice is also acidic, doing the same thing, but salt doesn't stabilize since it doesn't change the ph..

  8. I just made it and kept it 10 more minutes in the oven because I saw it was a little unstable, think it´s my oven. It was so big and beautiful. Baby steps

  9. I tried making this cake and the result wasn't the way it should be because mine was too wet and not fluffy. What could be the problem?

    Hi Stephanie, I decided to use your recipe for my first attempt at Angel Food cake. Used regular-size silicone cupcake forms as I don't have a pan like in the recipe. The cupcakes rose nicely. But after 25 min baking time were still soft and not springy to the touch. Once cooled & taken out of forms, they stayed very sticky. Is it normal for the finished product to be very sticky on the outside?

    Baking in silicon forms (no lining) was a mistake, cupcakes were barely edible because they smelled like silicon all the way.

    Do you use an oven thermomether? While I baked it it was on 170°C, after 15 minutes I have seen it became way darker than yours (I use the same form and put it on a rack on the second level from the bottom), so I have reduced till I got 150°C, but still, it came out too dark. Maybe It should be made with a lower Temperatur? (I followed the Quantities exactly (370g Eggwhites etc.)

    I tried 3 times and each time got pancake batter. I use Stevia as a sweetener instead of sugar. Could that be the reason why it didn't rise?

    just curious why some angel food cake recipes call for 1 cup cake flour and some call for 1 cup and 1/4 , does this make a difference? thanks Stephanie!

  30. I literally just made this, it's baking and it deflated a lot I would say I guess I didn't beat the egg whites enough… I hope it tastes good though!

  32. Hi, just wondering if anybody knows what you can do with all those egg yolks left over? or can you use store bought egg whites, will those work and save the loss of a dozen yolks?
